Mom's Mozarella Meat Loaf

Mix together:
1 1/2 lb. ground beef
1/2 c. oatmeal
1 egg, slightly beaten
1 T. mustard
1/8 t. pepper
2 t. salt
8 oz. mozzarella cheese, grated
1 t. dry parsley

Sauce:
3/4 c. catsup
3/4 c. water
1 T. worcestshire sauce

Pat beef mixture into 10" x 14" rectangle on wax paper.  Place cheese on meat; sprinkle with parsley.  Roll mixture with paper as for jelly roll.  Press ends to seam.  Transfer to a baking dish, seam down.  Pour sauce over meat.  Bake at 375 degrees, 1 hour.  Baste frequently.

Alternate: I (Rachel), mix the cheese in with the meat mixture, then press in to a bread pan, pouring the sauce over the top.  Doesn't require basting.
