Sift together in a large bowl:
3 c. flour
1 t. soda
1 t. salt
1 T. cinnamon
2 c. sugar
Combine and mix well:
4 eggs, beaten
1 1/4 c. vegetable oil
2 c. frozen strawberries, thawed (2-10 oz. packages)
Mix eggs, oil and strawberries in blender or food processor until strawberries are pureed. Then add liquid to dry ingredients. (Optional: add 1 1/4 c. chopped pecans).
Combine and pour into 2 greased 9" x 5" x 9" loaf pans and bake for 1 hour at 350 or until done. Cool 5-10 minutes. Remove from pan.
Note: for muffins, bake at 350 for 30 minutes
