Melt 2 sticks butter (part margarine) in 2 qt. pan. Add:
1 c. sugar
3 T. water
1 T. light corn syrup
Heat, stir occasionally until reaches 290 degrees.
Stir in:
1 c. chopped nuts
Cook 3 minutes longer stirring constantly. Pour into 9" square buttered pan. Melt 1 - 6 oz. package semi-sweet chocolate chips. Pour 1/2 over toffee.....flip entire "brick" and pour other 1/2 over other side. Sprinkle with 1 1/2-2 c. chopped nuts.
Aunt Marilyn's Tips:
This is an old Bruya recipe from the 1960's!
1) Only use stick margarine without water in it
2) Use a big enough pot because the butter/sugar mixture expands
3) Cook at slightly higher than medium temp or it will remain grainy and not turn into toffee
4) When toffee is cool, wipe off the excess butter on both sides before putting on the melted chocolate, or the butter won't stick. Allow one side to cool before putting chocolate on the second side.
Aaaah ha ha! Those funny chicken recipe cards--what a blast from the past. My mom still has most of her recipes on those and i think I've inherited a couple. sb
