Hixson's Cider Stew


2 lb. stew meat
3 T. flour
2 t. salt
1/4 t. pepper
1/4 t. thyme
2 c. apple cider
1/2 c. water
2 T. vinegar
3 potatoes, quartered
4 carrots, quartered
2 onions, sliced
1 celery branch, chopped

In a large saucepan, brown the meat in 3 T. oil. Combine flour, salt, pepper and thyme - add to the meat. Stir in the apple cider, water and vinegar. Cook and boil. Reduce heat and simmer 1 1/2 - 2 hours (or until meat is tender). Add the vegetables and cook 30 minutes, until tender. Makes approximately 6 servings.

*Use fresh pressed/homemade apple cider if you can!
