Mac & Cheese

Homemade Macaroni & Cheese always reminds me of Grandma Wilma...I like to think this tastes just like hers.

12-16 oz. tubular pasta
3 T. flour
1 1/2 c. milk, divided
2 T. butter
1 1/2 - 2 c. cheddar cheese, grated
Salt, pepper, hot sauce to taste
1/4 - 1/2 c. parmesan

Cook the pasta and drain.  Dissolve the flour in 1/2 c. of milk and then combine with remaining 1 c. of milk, butter and cheese in saucepan.  Slowly bring to a simmer, stirring often.  Cook on low heat until sauce is smooth and thick, 4-5 minutes.  Combined the pasta and cheese sauce in a casserole dish.  Season to taste with salt & pepper and hot sauce (a few drops brings out the flavor of the cheese).  Top with parmesan.  Bake at 400 degrees, 20-25 minutes.
