Preheat oven to 400 degrees.
Mix together:
1/4 c. lemon juice
2 T. tamari or soy sauce
3 T. veg. oil
1/2 c. water
1/4 c. chopped fresh cilantro
1 T. minced scallions
1 fresh hot pepper or 1 T. hot sauce
1/4 t. ground black pepper
Slice a package of tofu and place in baking pan. Pour sauce over. Bake 45-60 minutes, turning the tofu after 30 minutes. The baked tofu should be browned, bubbling and curling up at the edges.
Will keep in fridge for 5 days. Great for snacking, sandwiches or throw in to a salad.
