2 cups whole wheat flour
1 cup enriched flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup shortening
1/2 cup packed light brown sugar
1/4 cup sugar
1 tsp. salt
1 tsp. vanilla
1/2 cup milk
Stir together flour, baking powder, baking soda, salt. Cream shortening and sugar together until fluffy. Add vanilla. Add flour alternately with milk, mixing well after each addition. Chill dough overnight. Divide dough into quarters. Roll out each portion on floured surface into a rectangle 1/8th inch thick. Trim to 5 x 15" rectangle. Cut into 6 2 1/2 x 5" rectangles. Make a line down center of dough with back edge of knife. Mark each 2 1/2" square with fork prongs. Place on greased sheet. Bake at 350 degrees for 10-12 minutes.
Variations: substitute 1/4 cup honey or molasses for sugars. After rolling out dough, use cookie cutters for different shapes!
