1 lb. hot rotini pasta
2 bell peppers, chopped
5 oz. black olives, sliced
1/4 c. lemon juice
1/4 c. oil
1 T. garlic powder
1 T. oregano
1/4 c. flat-leaf italian parsley, chopped
3 blanched carrots, sliced thinly
1 1/2 t. salt
1 1/2 t. cayenne pepper
1 bunch green onion, chopped
Mix cold ingredients with hot pasta and store in refrigerator. Serve in a bed of lettuce and garnish with sliced tomatoes and parmesan cheese. Makes a family-sized salad. The Locust St. Grill was in Denton, TX.
